Happy Independence Day with a Tri colour Cake!!!!

This was on my mind from quite a while to bake a tri-colour cake for 15th august i.e. Our Independence Day. An occasion for which thousands of anonymous freedom fighters shed their blood. They silently sacrificed their lives to show us the dawn of independence. Sometimes when I see present India I feel whether we really deserve their sacrifices. Well it’s a big debate issue and I’m not going to pick it up right now:).
For now I’m going to present this beautiful tri- colour cake which resembles our National Flag.

Tiranga ( tri-colour) this is what we call it:) and those colour represents,

Saffron for strength

White for peace

Green for Abundance

                                     [ignore my piping skills;)]

I still remember those days we took part in Independence Day or republic day functions in school. We sung Patriotic songs and watched parade on this highly charged day. Gone those days, but I still feel pride whenever I see our national flag fluttering in the free air of our India and I’m a proud Indian for all good reasons:). Happy Independence day!

Ingredients:

4 large whole eggs (5 ounces/150 grams) at room temperature

3/4 cup whole milk /water at room temperature

2 1/4 teaspoons vanilla extract (9 grams) —

2 1/4 cups cake flour, sifted (11 ounces/315 grams)

1 1/4 cups sugar (12 ounces/350 grams)

1 tablespoon + 1 teaspoon baking powder (19.5 grams)

3/4 teaspoon salt (5 grams)

12 tablespoons unsalted butter/vegetable oil (6 ounces/170 grams)

Method

1. Preheat oven to 350°F (180°C). Grease one round 8” pan

2. In a bowl, combine the egg and the vanilla. Set aside.

3. In another bowl, combine all the dry ingredients together

4. Add the butter/vegetable oil and milk/water, and mix on low speed until they have
    blended well.

5. add the egg mixture and beat

6. Divide the batter in three bowls and add colors, beat again.

7. pour into the pan the first of tri color i.e. green and let it bake for around 10-15 mins or
just that the mixture is set for pouring the other part, a temperature of 160 degree did
    well.

8. Now pour the neutral color and again bake for 10-15 mins

9. Now pour the final part of saffron color and bake the cake for 15-20 mins (keep only the
top heating on for first 10 min) or until the toothpick comes out clean.

Be careful not to over bake. If u feel its almost done turn off the heat as rest of the cake will be baked with the heat present in the chamber.
Enjoy!
