" Brazilion cookies "

isn't it gorgeous !



When a friend of mine asked me to tell her a quick and easy recipe for cookies I was overwhelmed about the idea that someone’s really asking me a recipe. And I knew what I’m going to make for her. I came to know about Food Food network a few weeks ago and some programmes on that are very nice. Earlier I was watching an episode of tea time, in which chef Rakesh sethi made these gorgeous looking cookies. He was telling that Brazil is the largest coffee producing country in the world and coffee has deep influence in their cooking. This recipe is very easy to remember n make and goes well with tea or coffee.

Yield: 10-12 cookies

Ingredients


All purpose flour – 1cup

Powdered brown sugar – 80 gms (original recipe has 50gms of brown sugar and 50gms of     

                                                                white powdered sugar but I used only brown sugar) 

Unsalted butter – 50 gms (I used amul salted butter and skipped the salt)

Coffee powder – 1 tbsp

Vanilla extract or coffee extract – 1 tsp

Baking soda – ¼ tsp

Banana – Half

Milk – 2 tbsp

Salt – ¼ tsp (if using unsalted butter)

Method


1. Pre-heat oven at 165-170 degree Celsius.

2. In a bowl soften the butter and add sugar then whisk until creamy and fluffy.

3. Add the banana and vanilla / coffee extract and mix in.

4. Sieve the all purpose flour, baking soda, coffee powder and salt.

5. Stir in the dry ingredients and fold well.

6. Refrigerate this mixture for 10-12 minutes.

7. Grease a baking tray or u can use baking paper. Now make balls of 20 gms each and press    
      with the help of a fork (dipped into icing sugar) for texture on top. 

8. Bake them for 20-25 minutes, which purely depends upon the heat of your oven. Remove 
        cookies from the oven and cool them on a wire rack. 

    The cookies will be crisp up once they are cool
